Ingredients

  • Lasagna noodles (preferably no-boil)
  • Fresh spinach
  • Mushrooms (button or cremini)
  • Ricotta cheese
  • Mozzarella cheese
  • Parmesan cheese
  • Garlic
  • Heavy cream
  • Olive oil or butter
  • Fresh herbs (like basil or parsley)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat a tablespoon of olive oil in a skillet over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
  3. Toss in chopped mushrooms and cook until soft and browned. Add fresh spinach and cook until wilted, then set aside.
  4. Combine ricotta cheese, half of the heavy cream, salt, pepper, and fresh herbs in a large bowl. Mix well.
  5. Spread a small layer of the ricotta mixture in the bottom of a baking dish.
  6. Layer with noodles, sautéed mushrooms, spinach, ricotta mixture, and a sprinkle of mozzarella.
  7. Repeat these layers until all ingredients are used, finishing with mozzarella and Parmesan on top.
  8. Pour the remaining heavy cream over the top layer.
  9. Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 15 minutes until cheese is bubbly and golden brown.
  10. Let the lasagna rest for 10 minutes before slicing.
