Ingredients
- Lasagna noodles (preferably no-boil)
- Fresh spinach
- Mushrooms (button or cremini)
- Ricotta cheese
- Mozzarella cheese
- Parmesan cheese
- Garlic
- Heavy cream
- Olive oil or butter
- Fresh herbs (like basil or parsley)
Instructions
- Preheat your oven to 375°F (190°C).
- Heat a tablespoon of olive oil in a skillet over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
- Toss in chopped mushrooms and cook until soft and browned. Add fresh spinach and cook until wilted, then set aside.
- Combine ricotta cheese, half of the heavy cream, salt, pepper, and fresh herbs in a large bowl. Mix well.
- Spread a small layer of the ricotta mixture in the bottom of a baking dish.
- Layer with noodles, sautéed mushrooms, spinach, ricotta mixture, and a sprinkle of mozzarella.
- Repeat these layers until all ingredients are used, finishing with mozzarella and Parmesan on top.
- Pour the remaining heavy cream over the top layer.
- Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 15 minutes until cheese is bubbly and golden brown.
- Let the lasagna rest for 10 minutes before slicing.
