- 2 boneless chicken breasts or thighs
- 1 cup cottage cheese
- 2 cups fresh spinach (or thawed frozen spinach)
- 1 cup canned or frozen artichokes
- 3 cloves garlic, minced
- 1 small onion, chopped
- 1 tablespoon olive oil
- 1 tablespoon fresh thyme (or dried)
- 1 tablespoon fresh basil (or dried)
- 1/4 cup cream or milk
- Salt and pepper, to taste
Instructions
- Heat olive oil in a large skillet over medium heat. Season the chicken with salt and pepper, and cook until golden brown, about 5-7 minutes per side. Remove and set aside.
- Add chopped onion and minced garlic to the skillet; sauté for 3-4 minutes until fragrant and softened.
- Stir in spinach and artichokes, cooking until the spinach wilts down.
- Lower the heat, then add cottage cheese and cream/milk, stirring well to combine. Warm through.
- Return the chicken to the skillet, coating it in the creamy mixture and simmer for a few minutes to meld the flavors.
- Transfer to serving dish and garnish with fresh herbs or Parmesan cheese, if desired.
Notes
For a vegetarian version, substitute chicken with tofu or seitan, and use ricotta instead of cottage cheese.
