Ingredients
- Spaghetti
- Fresh Spinach (5-6 cups)
- Sun-Dried Tomatoes (packed in oil)
- Garlic (minced)
- Heavy Cream
- Parmesan Cheese (freshly grated)

Instructions
- Cook the spaghetti in salted boiling water until al dente. Reserve 1/2 cup of pasta water, then drain.
- In a skillet, heat olive oil over medium heat, add garlic, and sauté for 30 seconds.
- Add spinach, sauté until wilted, then lower the heat and stir in the heavy cream.
- Once slightly thickened, mix in the sun-dried tomatoes and half of the Parmesan.
- Combine with the spaghetti, using reserved pasta water to adjust the sauce consistency.
- Plate the dish, garnish with remaining Parmesan, and serve with black pepper or red pepper flakes.
Notes
For lighter options, consider half-and-half or plant-based cream. Reserve pasta water helps achieve a silky sauce.
