  • Fresh Spinach (5-6 cups)
  • Sun-Dried Tomatoes (packed in oil)
  • Garlic (minced)
  • Heavy Cream
  • Parmesan Cheese (freshly grated)

Instructions

  1. Cook the spaghetti in salted boiling water until al dente. Reserve 1/2 cup of pasta water, then drain.
  2. In a skillet, heat olive oil over medium heat, add garlic, and sauté for 30 seconds.
  3. Add spinach, sauté until wilted, then lower the heat and stir in the heavy cream.
  4. Once slightly thickened, mix in the sun-dried tomatoes and half of the Parmesan.
  5. Combine with the spaghetti, using reserved pasta water to adjust the sauce consistency.
  6. Plate the dish, garnish with remaining Parmesan, and serve with black pepper or red pepper flakes.
