- 4 cups Potatoes (Yukon Gold or Russet), peeled and diced
- 1 cup Button mushrooms, sliced
- 1 sweet Onion, chopped
- 2 cloves Garlic, minced
- 4 cups Vegetable or Chicken broth
- 1 cup Heavy cream or dairy-free alternative
- 2 tablespoons Fresh thyme, chopped
- 2 tablespoons Fresh parsley, chopped
- Salt and Pepper, to taste
- 1 tablespoon Olive oil or Butter
Instructions
- Prepare Your Vegetables: Peel and dice the potatoes, chop the onion and garlic, and slice the mushrooms.
- Sauté the Aromatics: Heat olive oil or butter in a large pot, add onions, and cook until translucent. Stir in garlic and mushrooms until tender.
- Add the Potatoes and Broth: Add diced potatoes and cover with broth. Bring to a gentle boil.
- Simmer the Soup: Lower the heat and let it simmer for 20-25 minutes until the potatoes are fork-tender.
- Blend for Creaminess: Use an immersion blender to blend the soup until smooth or to your preference.
- Add Cream and Herbs: Stir in cream and fresh thyme and parsley. Season with salt and pepper to taste.
- Serve with Love: Ladle into bowls and optionally top with fresh herbs.
Notes
You can use low-fat milk instead of cream for a lighter option. This soup can easily be frozen for up to 2-3 months.
