Instructions

  1. Prep the Squash: Peel, seed, and cube butternut squash.
  2. Cook the Pasta: Boil salted water and cook rigatoni until al dente. Reserve 1 cup of pasta water before draining.
  3. Sauté the Sausage and Vegetables: In a skillet, heat olive oil and sauté onion until translucent. Add garlic and sauté until fragrant. Cook sausage until browned.
  4. Add Butternut Squash: Stir in butternut squash and cook for 10-15 minutes until tender.
  5. Create the Creamy Sauce: Lower heat and stir in heavy cream, adding reserved pasta water for desired consistency.
  6. Combine Pasta and Sauce: Add drained pasta to the sauce and toss to coat.
