- 2 cups butternut squash, peeled and cubed
- 1 pound spicy Italian sausage
- 1 cup heavy cream
- 4 cloves garlic, minced
- 1 medium onion, chopped

- Fresh herbs (sage or thyme), for garnish
- Salt and pepper, to taste
- 1 tablespoon olive oil
Instructions
- Prep the Squash: Peel, seed, and cube butternut squash.
- Cook the Pasta: Boil salted water and cook rigatoni until al dente. Reserve 1 cup of pasta water before draining.
- Sauté the Sausage and Vegetables: In a skillet, heat olive oil and sauté onion until translucent. Add garlic and sauté until fragrant. Cook sausage until browned.
- Add Butternut Squash: Stir in butternut squash and cook for 10-15 minutes until tender.
- Create the Creamy Sauce: Lower heat and stir in heavy cream, adding reserved pasta water for desired consistency.
- Combine Pasta and Sauce: Add drained pasta to the sauce and toss to coat.
- Add Fresh Herbs and Cheese: Stir in Parmesan cheese and any herbs.
- Serve and Enjoy: Plate the dish and garnish with extra cheese and herbs.
Notes
Feel free to substitute spicy sausage with turkey or chicken for a leaner option. Add red pepper flakes for extra heat if desired.
