  • 1 cup celery, diced

  • Salt and pepper, to taste

Instructions

  1. Brown the sausage in a large pot over medium heat until golden.
  2. Remove the sausage and set aside, leaving the drippings in the pot.
  3. Add diced onions and garlic; cook until softened, about 3-4 minutes.
  4. Stir in diced potatoes, carrots, and celery.
  5. Pour in the broth, ensuring vegetables are submerged.
  6. Bring to a gentle boil, then reduce heat and simmer until potatoes are fork-tender, about 15-20 minutes.
  7. Stir in cream and the cooked sausage; heat through for another 5 minutes.
  8. Season with salt, pepper, and fresh herbs.
  9. Serve warm, garnished with parsley or cheese if desired.

Notes

Let the cream warm to room temperature before adding to avoid curdling. For a thicker chowder, mash some potatoes before adding cream.
