- 2 cups chicken or vegetable broth
- 1 cup cream or milk (half-and-half or whole milk)
- 1 cup carrots, diced
- 1 cup celery, diced
- Fresh thyme and parsley, to taste
- Salt and pepper, to taste
Instructions
- Brown the sausage in a large pot over medium heat until golden.
- Remove the sausage and set aside, leaving the drippings in the pot.
- Add diced onions and garlic; cook until softened, about 3-4 minutes.
- Stir in diced potatoes, carrots, and celery.
- Pour in the broth, ensuring vegetables are submerged.
- Bring to a gentle boil, then reduce heat and simmer until potatoes are fork-tender, about 15-20 minutes.
- Stir in cream and the cooked sausage; heat through for another 5 minutes.
- Season with salt, pepper, and fresh herbs.
- Serve warm, garnished with parsley or cheese if desired.
Notes
Let the cream warm to room temperature before adding to avoid curdling. For a thicker chowder, mash some potatoes before adding cream.
