- 1 pound gnocchi
- 2 cups fresh basil
- 1/3 cup pine nuts (toasted)
- 2 cloves garlic
- 1/2 cup extra virgin olive oil
- 1 cup heavy cream
- 1/2 cup freshly grated Parmesan cheese
- Salt to taste
Instructions
- Cook the gnocchi in boiling salted water until they float, about 2–3 minutes. Transfer to a plate and set aside.
- In a food processor, combine basil, pine nuts, garlic, and a pinch of salt. Pulse until fine, then gradually add olive oil to achieve a smooth consistency. Stir in Parmesan and adjust seasoning.
- In a skillet over medium heat, sauté any choice of vegetables in olive oil for 3–4 minutes, then add the cream and cook until slightly thickened, about 2–3 minutes.
- Toss the cooked gnocchi with the pesto and sauce in the skillet for about a minute to coat, then serve immediately, garnished with extra Parmesan and basil if desired.
Notes
Feel free to customize the recipe with sautéed vegetables or proteins. This dish can also be frozen and reheated easily.
