  • 3 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh herbs (basil or parsley) for garnish

Instructions

  1. In a large pot, heat a drizzle of olive oil over medium heat. Add the Italian sausage and cook until browned, breaking it apart with a wooden spoon for about 5-7 minutes.
  2. Add diced onions and minced garlic. Stir until the onion becomes translucent and fragrant, about 3-4 minutes.
  3. Pour in a splash of chicken broth or white wine to deglaze the pot, scraping up brown bits from the bottom.
  4. Add remaining broth and ditalini pasta. Bring to a boil, reduce to a simmer, and cook for 8-10 minutes until the pasta is al dente.
  5. Lower the heat and stir in heavy cream and Parmesan cheese, allowing it to melt into the soup.
  6. Taste and adjust seasoning with salt and pepper. Add fresh herbs just before serving.
