- 1 lb Italian sausage (sweet and spicy)
- 1 cup ditalini pasta
- 1 cup heavy cream
- 1 cup freshly grated Parmesan cheese
- 4 cups chicken broth (or vegetable broth)
- 1 medium onion, diced
- 3 cloves garlic, minced
- Salt and pepper to taste
- Fresh herbs (basil or parsley) for garnish
Instructions
- In a large pot, heat a drizzle of olive oil over medium heat. Add the Italian sausage and cook until browned, breaking it apart with a wooden spoon for about 5-7 minutes.
- Add diced onions and minced garlic. Stir until the onion becomes translucent and fragrant, about 3-4 minutes.
- Pour in a splash of chicken broth or white wine to deglaze the pot, scraping up brown bits from the bottom.
- Add remaining broth and ditalini pasta. Bring to a boil, reduce to a simmer, and cook for 8-10 minutes until the pasta is al dente.
- Lower the heat and stir in heavy cream and Parmesan cheese, allowing it to melt into the soup.
- Taste and adjust seasoning with salt and pepper. Add fresh herbs just before serving.
Notes
For a vegetarian option, substitute sausage with mushrooms or lentils. Avoid overcooking pasta and add cream last to maintain its texture.
