- 1 pound Italian sausage
- 1 cup ditalini pasta
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 8 ounces mushrooms, sliced
- 3 cloves garlic, minced
- 4 cups chicken or vegetable broth
- 1 cup heavy cream
- 1 cup freshly grated Parmesan cheese
- 2 tablespoons olive oil
- Fresh herbs (basil and thyme)
- Salt and pepper to taste
Instructions
- Brown the sausage: In a large pot, heat olive oil over medium heat. Add the Italian sausage, breaking it apart as it cooks until it’s browned, about 5-7 minutes.
- Sauté vegetables: Add onions, carrots, and celery. Cook until softened, about 5 minutes. Stir in garlic and mushrooms, cooking for another 3 minutes.
- Add broth and pasta: Pour in the broth and bring to a gentle boil. Add ditalini pasta and cook according to package instructions, about 8-10 minutes.
- Stir in the cream: Lower the heat and stir in heavy cream and Parmesan cheese. Simmer for a few minutes until thick and creamy.
- Season and serve: Season with salt, pepper, fresh herbs, and extra Parmesan. Serve hot.
Notes
Ensure you don’t overcook the pasta as it will continue to soften in the soup. This recipe can easily be doubled for larger gatherings.
