- 2 cups cremini or shiitake mushrooms, sliced
- 2 tablespoons butter
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 small onion, chopped
- 1 cup heavy cream
- 1 cup freshly grated Parmesan cheese
- 2 tablespoons fresh thyme or parsley, chopped
- 2 cups vegetable or chicken broth
Instructions
- Prepare the Ingredients: Start by cleaning and slicing your mushrooms, mincing the garlic, and chopping the onion.
- Cook the Orzo: In a pot, bring salted water to a boil and add the orzo. Cook until al dente, about 8-10 minutes, then drain and set aside, reserving some pasta water.
- Sauté Aromatics: In a large skillet, heat equal parts butter and olive oil over medium heat. Add the onions and sauté until translucent. Toss in the garlic, followed by the mushrooms. Cook until the mushrooms soften and start to brown; this should take about 5-7 minutes.
- Combine the Orzo: Add the drained orzo into the skillet with the mushroom mixture. Mix well!
- Create the Cream Sauce: Pour in heavy cream and let it simmer, stirring gently for a few minutes until it thickens. If it’s too thick, use reserved pasta water to reach your desired consistency.
- Finish With Cheese and Herbs: Stir in freshly grated Parmesan and freshly chopped herbs. Taste for seasoning and adjust with salt and pepper.
- Serve Hot: Plate the Creamy Orzo with Mushrooms, garnishing with extra cheese and herbs if desired.
Notes
For added brightness, consider adding a squeeze of lemon juice before serving. This dish pairs wonderfully with grilled chicken or roasted vegetables.
