- 2 cups Orzo Pasta
- 1 lb Large Shrimp, peeled and deveined
- 2 cups Fresh Broccoli Florets
- 1 cup Heavy Cream
- 3 cloves Garlic, minced
- 1/2 cup Parmesan Cheese, grated
- 2 cups Chicken or Vegetable Broth
- 2 tablespoons Olive Oil
- Salt and Pepper to taste
- Fresh Herbs (Parsley or Basil) for garnish
Instructions
- Start by boiling water in a large pot. Add salt and cook the orzo according to package instructions until al dente, about 8-10 minutes.
- While the orzo cooks, heat olive oil in a large skillet over medium heat. Season the shrimp with salt and pepper, then cook for 2-3 minutes on each side until pink. Remove and set aside.
- In the same skillet, add a splash more olive oil and sauté the broccoli for 3-4 minutes until vibrant and tender.
- Lower the heat, add minced garlic to the pan and stir for 30 seconds until fragrant. Pour in the heavy cream and then add the cooked orzo. Stir to combine and let simmer for a few minutes.
- Return the shrimp to the skillet, sprinkle with parmesan cheese, and mix until well-coated. Serve immediately, garnished with fresh herbs.
Notes
For a vegetarian option, substitute shrimp with chickpeas or sautéed mushrooms.
