  • 1 small onion, diced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Fresh herbs (parsley or thyme), for garnish
  • 1 tablespoon olive oil

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add diced onions and sauté until softened, about 3 minutes.
  2. Add minced garlic and sliced mushrooms, cooking until the mushrooms are tender and release their juices, about 5-7 minutes.
  3. Stir in the orzo, cooking for 1-2 minutes to absorb flavors.
  4. Pour in the vegetable broth, bring to a gentle boil, then reduce heat and cover. Simmer for about 10 minutes until the orzo is al dente and most liquid is absorbed.
  5. Stir in heavy cream and grated Parmesan cheese until creamy.
  6. Finish with fresh herbs, salt, and pepper to taste, and serve immediately.

Notes

For a lighter version, substitute heavy cream with half-and-half. Store leftovers in an airtight container for up to 3 days.
