- 1 cup orzo
- 8 oz fresh mushrooms (cremini or your choice)
- 3 cloves garlic, minced
- 1 small onion, diced
- 4 cups vegetable broth
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- Fresh herbs (parsley or thyme), for garnish
- 1 tablespoon olive oil
Instructions
- Heat olive oil in a large skillet over medium heat. Add diced onions and sauté until softened, about 3 minutes.
- Add minced garlic and sliced mushrooms, cooking until the mushrooms are tender and release their juices, about 5-7 minutes.
- Stir in the orzo, cooking for 1-2 minutes to absorb flavors.
- Pour in the vegetable broth, bring to a gentle boil, then reduce heat and cover. Simmer for about 10 minutes until the orzo is al dente and most liquid is absorbed.
- Stir in heavy cream and grated Parmesan cheese until creamy.
- Finish with fresh herbs, salt, and pepper to taste, and serve immediately.
Notes
For a lighter version, substitute heavy cream with half-and-half. Store leftovers in an airtight container for up to 3 days.
