Ingredients

  • 2 cups elbow macaroni
  • 1 cup mayonnaise
  • 2 tablespoons apple cider vinegar
  • 3 tablespoons sweet pickle relish
  • 1 tablespoon Dijon mustard
  • 1 cup diced celery
  • 1 cup diced bell peppers
  • 1/2 cup diced onion
  • Salt and pepper to taste
  • Fresh parsley or dill for garnish

Instructions

  1. Bring a large pot of salted water to a boil, add macaroni, and cook until al dente, about 8-10 minutes. Drain and rinse under cold water.
  2. In a mixing bowl, combine mayonnaise, vinegar, mustard, and sweet pickle relish. Mix until smooth.
  3. In a large bowl, combine cooled pasta, celery, bell peppers, and onion. Pour dressing over and toss gently.
  4. Cover and refrigerate for at least 1 hour.
  5. Before serving, add chopped herbs and mix gently. Serve chilled or at room temperature.
