Ingredients

- 2 cups elbow macaroni
- 1 cup mayonnaise
- 2 tablespoons apple cider vinegar
- 3 tablespoons sweet pickle relish
- 1 tablespoon Dijon mustard
- 1 cup diced celery
- 1 cup diced bell peppers
- 1/2 cup diced onion
- Salt and pepper to taste
- Fresh parsley or dill for garnish
Instructions
- Bring a large pot of salted water to a boil, add macaroni, and cook until al dente, about 8-10 minutes. Drain and rinse under cold water.
- In a mixing bowl, combine mayonnaise, vinegar, mustard, and sweet pickle relish. Mix until smooth.
- In a large bowl, combine cooled pasta, celery, bell peppers, and onion. Pour dressing over and toss gently.
- Cover and refrigerate for at least 1 hour.
- Before serving, add chopped herbs and mix gently. Serve chilled or at room temperature.
Notes
Avoid overcooking the pasta for the perfect texture. Chilling the salad allows for better flavor melding.
