Description

  • 2 cups sharp cheddar cheese, shredded
  • 1 cup mozzarella cheese, shredded
  • 4 tbsp unsalted butter
  • 2 tbsp all-purpose flour
  • 2 cups whole milk
  • 1 cup heavy cream
  • 1 tsp paprika (optional)
  • 1 tsp ground mustard (optional)
  • Salt and pepper, to taste
  • Breadcrumbs, for topping (optional)

Instructions

  1. Cook the pasta in a large pot of salted boiling water until al dente, according to package directions. Drain and set aside.
  2. Make the cheese sauce by melting the butter in a large saucepan over medium heat. Whisk in flour to create a roux, cooking for about a minute.
  3. Add the milk and cream gradually, stirring continuously until thickened.
  4. Stir in the shredded cheese until melted and smooth.
  5. Combine the cooked macaroni with the cheese sauce, folding gently to mix.
  6. Serve immediately, or for a crispy topping, pour into a baking dish, sprinkle with breadcrumbs, and bake at 350°F (175°C) for 20 minutes.
