- 8 oz elbow macaroni
- 2 cups sharp cheddar cheese, shredded
- 1 cup mozzarella cheese, shredded
- 4 tbsp unsalted butter
- 2 tbsp all-purpose flour
- 2 cups whole milk
- 1 cup heavy cream
- 1 tsp paprika (optional)
- 1 tsp ground mustard (optional)
- Salt and pepper, to taste
- Breadcrumbs, for topping (optional)
Instructions
- Cook the pasta in a large pot of salted boiling water until al dente, according to package directions. Drain and set aside.
- Make the cheese sauce by melting the butter in a large saucepan over medium heat. Whisk in flour to create a roux, cooking for about a minute.
- Add the milk and cream gradually, stirring continuously until thickened.
- Stir in the shredded cheese until melted and smooth.
- Combine the cooked macaroni with the cheese sauce, folding gently to mix.
- Serve immediately, or for a crispy topping, pour into a baking dish, sprinkle with breadcrumbs, and bake at 350°F (175°C) for 20 minutes.
