Ingredients

  • 8 oz Fettuccine or Penne pasta
  • 2 Salmon fillets
  • 1 cup Heavy Cream
  • 1 Lemon (zest and juice)
  • 2 tbsp Fresh Dill, chopped
  • 2 Garlic cloves, minced
  • 1/2 cup Grated Parmesan Cheese
  • Salt and pepper to taste
  • Olive oil or butter for sautéing

Instructions

  1. Cook your pasta according to package instructions in salted boiling water until al dente. Reserve about a cup of pasta water before draining.
  2. Sauté minced garlic in olive oil or butter over medium heat for about 1 minute until fragrant.
  3. Cook salmon fillets, seasoned with salt and pepper, in the skillet for about 4 minutes on each side until flaked easily. Remove and set aside.
  4. Create the sauce by pouring in heavy cream, lemon juice, and lemon zest into the skillet. Simmer gently, stirring often.
  5. Add drained pasta to the skillet with the sauce, sprinkling in fresh dill. Toss to coat.
  6. Incorporate flaked salmon into the pasta, mixing gently. Top with Parmesan cheese.
  7. Serve immediately, garnishing with additional dill and lemon wedges.

Notes

Best enjoyed fresh, but leftovers can be stored in an airtight container in the fridge for up to 3 days.
