Ingredients

- 1 cup Greek Yogurt or Silken Tofu
- ½ cup grated Parmesan Cheese
- 1 clove minced Garlic
- 1 tablespoon Anchovy Paste or 1 teaspoon Worcestershire Sauce
- Juice of 1 Lemon
- 2 tablespoons Extra-Virgin Olive Oil
- Salt and Pepper to taste
Instructions
- Gather all ingredients, allowing Greek yogurt to reach room temperature.
- In a bowl, combine Greek yogurt or silken tofu, Parmesan, minced garlic, anchovy paste or Worcestershire sauce, and lemon juice.
- Slowly drizzle in olive oil while whisking until smooth and creamy.
- Adjust consistency with water or more olive oil if desired.
- Add salt and pepper to taste.
- Top with additional Parmesan for serving.
Notes
Let the dressing rest for 15-20 minutes to meld flavors before serving. Store leftovers in an airtight container in the refrigerator for up to a week.
