Ingredients

- 4 large Yukon Gold or Russet potatoes, chopped
- 1 yellow or white onion, finely chopped
- 3 cloves garlic, minced
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 cups vegetable or chicken broth
- 1 cup heavy cream
- 2 tablespoons Cajun seasoning
- Salt and pepper, to taste
- Optional: 1 cup sautéed mushrooms, bacon, or shrimp
Instructions
- Prepare your ingredients: Chop the potatoes, onions, carrots, and any other veggies into uniform cubes.
- Sauté (optional): In a skillet, add olive oil and sauté onions, garlic, and optional mushrooms until soft.
- Combine in Slow Cooker: Transfer sautéed ingredients to slow cooker. Add potatoes, carrots, celery, Cajun seasoning, salt, and pepper.
- Add Broth: Pour in broth, covering the ingredients.
- Cooking Time: Set cooker on low for 6-8 hours or high for 3-4 hours.
- Finishing Touches: Stir in heavy cream; adjust seasoning as needed. Optionally use an immersion blender for a creamier texture.
- Serve and Enjoy: Ladle into bowls, top with green onions, serve warm with crusty bread or salad.
Notes
For a lighter version, substitute half-and-half or coconut milk for heavy cream.
