Ingredients
- Pasta (spaghetti or fettuccine)
- Whole-milk yogurt (or Greek yogurt)
- Fresh garlic
- Grated parmesan cheese (or pecorino)
- Cremini or button mushrooms
- Fresh parsley or basil
- Olive oil
- Butter
- Salt and pepper
Instructions
- Boil a large pot of salted water and cook pasta until al dente. Reserve a cup of pasta water before draining.
- In a large skillet, heat equal parts olive oil and butter over medium heat, then sauté sliced garlic until fragrant.
- Add chopped mushrooms and sauté until golden.
- Lower the heat, stir in yogurt, and add reserved pasta water as necessary for desired consistency.
- Toss in cooked pasta, grated parmesan, and chopped herbs, mixing gently.
- Season with salt and pepper to taste, serving immediately with extra parmesan and fresh herbs.
Notes
For a low-carb version, substitute pasta with zucchini noodles. For a vegan option, use dairy-free yogurt.
