Ingredients

  • Pasta (spaghetti or fettuccine)
  • Whole-milk yogurt (or Greek yogurt)
  • Fresh garlic
  • Grated parmesan cheese (or pecorino)
  • Cremini or button mushrooms
  • Fresh parsley or basil
  • Olive oil
  • Butter
  • Salt and pepper

Instructions

  1. Boil a large pot of salted water and cook pasta until al dente. Reserve a cup of pasta water before draining.
  2. In a large skillet, heat equal parts olive oil and butter over medium heat, then sauté sliced garlic until fragrant.
  3. Add chopped mushrooms and sauté until golden.
  4. Lower the heat, stir in yogurt, and add reserved pasta water as necessary for desired consistency.
  5. Toss in cooked pasta, grated parmesan, and chopped herbs, mixing gently.
  6. Season with salt and pepper to taste, serving immediately with extra parmesan and fresh herbs.
