- Boneless chicken breast or thighs
- 1 cup heavy cream
- 5 cloves fresh garlic, minced
- 1 cup button or cremini mushrooms, sliced
- 2 cups fresh spinach
- 1/2 cup grated Parmesan cheese
- 1 teaspoon fresh thyme or Italian seasoning
- 1/2 teaspoon red pepper flakes (optional)
- 2 tablespoons olive oil
- 2 tablespoons butter
- Salt and pepper to taste
Instructions
- Season the chicken on both sides with salt, pepper, and half of the minced garlic.
- Heat a skillet over medium heat with olive oil and 1 tablespoon of butter. Add the chicken and sear until golden brown (about 5-7 minutes per side). Remove from skillet and set aside.
- In the same skillet, add the remaining butter and garlic, sautéing until fragrant (about 30 seconds). Add mushrooms and sauté until softened (about 5 minutes).
- Add the cream, stirring to combine with garlic and mushrooms. Bring to a gentle simmer, then add grated Parmesan cheese for a richer sauce.
- Stir in fresh spinach until wilted, then return the chicken to the skillet. Simmer together for a couple of minutes to marry the flavors.
- Finish with fresh herbs and red pepper flakes, if desired. Serve hot with crusty bread or rice.
Notes
For a lighter version, substitute heavy cream with half-and-half or coconut cream. Adjust cooking times accordingly for different creamy bases.
