- 2 tablespoons olive oil

- 4 cloves garlic, minced
- 8 ounces mushrooms, sliced (cremini or button)
- 2 cups spinach or kale
- 1 cup heavy cream
- 1 cup diced tomatoes (fresh or canned)
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1 teaspoon dried thyme
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
Instructions
- Heat olive oil and butter in a large skillet over medium-high heat. Season the chicken with salt and pepper, and sauté for about 5-7 minutes on each side until golden brown. Remove and set aside.
- Add minced garlic to the same skillet and sauté until fragrant (about 30 seconds). Add the sliced mushrooms and cook until tender (3-4 minutes).
- Stir in the spinach and diced tomatoes, letting them wilt for about 2-3 minutes.
- Pour in the heavy cream, stir to combine, then add dried herbs and let simmer until slightly thickened.
- Return the chicken to the skillet, allowing it to simmer in the sauce for another 5-10 minutes until cooked through.
- Sprinkle grated Parmesan over the dish and mix until melted. Serve warm, garnished with fresh herbs.
Notes
Feel free to substitute chicken with shrimp or chickpeas for a vegetarian option. Pair with pasta or a simple green salad.
