  • 2 cups spinach or kale
  • 1 cup heavy cream
  • 1 cup diced tomatoes (fresh or canned)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon dried thyme
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Heat olive oil and butter in a large skillet over medium-high heat. Season the chicken with salt and pepper, and sauté for about 5-7 minutes on each side until golden brown. Remove and set aside.
  2. Add minced garlic to the same skillet and sauté until fragrant (about 30 seconds). Add the sliced mushrooms and cook until tender (3-4 minutes).
  3. Stir in the spinach and diced tomatoes, letting them wilt for about 2-3 minutes.
  4. Pour in the heavy cream, stir to combine, then add dried herbs and let simmer until slightly thickened.
  5. Return the chicken to the skillet, allowing it to simmer in the sauce for another 5-10 minutes until cooked through.
  6. Sprinkle grated Parmesan over the dish and mix until melted. Serve warm, garnished with fresh herbs.
