- 1 pound large shrimp, peeled and deveined
- 1 cup orzo
- 4 cloves garlic, minced
- 1 cup heavy cream
- 2 tablespoons butter
- 1 lemon, juiced and zested
- 1/4 cup fresh parsley, chopped
- Salt and pepper to taste
Instructions
- Cook the orzo in boiling salted water according to package instructions until al dente. Drain and set aside, reserving a bit of the pasta cooking water.
- In a large skillet, melt butter over medium heat. Add minced garlic and cook until fragrant, about 1 minute.
- Season the shrimp with salt and pepper. Increase the heat slightly and add to the skillet, cooking until pink, about 2-3 minutes on each side. Remove from skillet.
- In the same skillet, pour in heavy cream, scraping up any bits stuck to the pan. Add lemon juice, zest, and a bit of reserved pasta water to loosen the sauce. Simmer for a couple of minutes until thickened.
- Return the shrimp to the skillet with the cooked orzo. Toss gently to coat in the sauce. Adjust seasoning if needed.
- Remove from heat, stir in chopped parsley, and serve warm, garnished with extra lemon zest if desired.
Notes
For added umami, consider adding grated Parmesan cheese.
