Creamy Garlic Lemon Shrimp Orzo

Description

A delightful, creamy pasta dish combining garlic, lemon, and succulent shrimp for a heartwarming meal.


Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 1 cup orzo
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 2 tablespoons butter
  • 1 lemon, juiced and zested
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Cook the orzo in boiling salted water according to package instructions until al dente. Drain and set aside, reserving a bit of the pasta cooking water.
  2. In a large skillet, melt butter over medium heat. Add minced garlic and cook until fragrant, about 1 minute.
  3. Season the shrimp with salt and pepper. Increase the heat slightly and add to the skillet, cooking until pink, about 2-3 minutes on each side. Remove from skillet.
  4. In the same skillet, pour in heavy cream, scraping up any bits stuck to the pan. Add lemon juice, zest, and a bit of reserved pasta water to loosen the sauce. Simmer for a couple of minutes until thickened.
  5. Return the shrimp to the skillet with the cooked orzo. Toss gently to coat in the sauce. Adjust seasoning if needed.
  6. Remove from heat, stir in chopped parsley, and serve warm, garnished with extra lemon zest if desired.

Notes

For added umami, consider adding grated Parmesan cheese.
