Ingredients

  • Spaghetti or fettuccine
  • Fresh tomatoes (preferably vine-ripened)
  • Fresh garlic cloves
  • Heavy cream
  • Olive oil
  • Onion (optional)
  • Fresh basil or parsley
  • Sea salt
  • Freshly cracked black pepper

Instructions

  1. Cook the pasta: Boil salted water and cook pasta until al dente, reserving a cup of pasta water before draining.
  2. Sauté aromatics: In a skillet over medium heat, add olive oil and sauté minced garlic (and onion if using) for 2 minutes until fragrant.
  3. Add tomatoes: Chop fresh tomatoes and add to the skillet. Simmer for 5–7 minutes until they release their juices.
  4. Create the creamy sauce: Reduce heat, pour in the heavy cream, and stir continuously. Adjust consistency with reserved pasta water if necessary.
  5. Combine: Add drained pasta to the skillet and toss in the sauce. Season with salt, pepper, and fresh herbs.
  6. Serve and enjoy: Serve warm with extra herbs, cheese, and crusty bread.
