Ingredients
- Spaghetti or fettuccine
- Fresh tomatoes (preferably vine-ripened)
- Fresh garlic cloves
- Heavy cream
- Olive oil
- Onion (optional)
- Fresh basil or parsley
- Sea salt
- Freshly cracked black pepper
Instructions
- Cook the pasta: Boil salted water and cook pasta until al dente, reserving a cup of pasta water before draining.
- Sauté aromatics: In a skillet over medium heat, add olive oil and sauté minced garlic (and onion if using) for 2 minutes until fragrant.
- Add tomatoes: Chop fresh tomatoes and add to the skillet. Simmer for 5–7 minutes until they release their juices.
- Create the creamy sauce: Reduce heat, pour in the heavy cream, and stir continuously. Adjust consistency with reserved pasta water if necessary.
- Combine: Add drained pasta to the skillet and toss in the sauce. Season with salt, pepper, and fresh herbs.
- Serve and enjoy: Serve warm with extra herbs, cheese, and crusty bread.
