- 4 Yukon Gold or Russet potatoes, washed and peeled
- 1 large sweet onion, diced
- 3 cloves fresh garlic, minced

- 8 oz cream cheese or shredded cheddar
- 1 tsp dried thyme
- 1 tsp dried rosemary
- Salt and pepper to taste
Instructions
- Prepare the ingredients: Start by washing and peeling the potatoes, then cut them into bite-sized cubes. Dice the onions and mince the garlic.
- Sauté the aromatics: In a skillet, sauté the onions and garlic until translucent and fragrant.
- Combine the ingredients in the Crock Pot: Layer the sautéed aromatics, potatoes, broth, and desired seasonings in the Crock Pot.
- Cook low and slow: Set your Crock Pot to low for 6-8 hours or high for 3-4 hours.
- Add creaminess: Once the potatoes are tender, stir in the cream and cheese, and mash a few potato pieces for a hearty texture.
- Final seasoning: Taste and adjust seasoning as needed.
- Serve hot: Ladle the soup into bowls and garnish with fresh herbs or cheese.
Notes
For a lighter version, substitute heavy cream with almond milk or coconut cream. Optionally add sautéed mushrooms for extra flavor.
