Description

A comforting and delicious pasta dish featuring tender chicken in a rich, creamy sauce infused with garlic, butter, and fresh herbs.


Ingredients

  • Chicken (breast or thighs)
  • Unsalted butter
  • Heavy cream
  • Garlic (minced)
  • Mushrooms (cremini or button)
  • Pasta (fettuccine or penne)
  • Fresh thyme
  • Fresh parsley
  • Parmesan cheese (grated)
  • Salt and pepper

Instructions

  1. Season your chicken with salt and pepper. In a large skillet over medium heat, melt 1 tablespoon of butter. Add the chicken and cook until golden brown and cooked through, about 6-7 minutes. Remove from the skillet and let rest.
  2. In the same skillet, add the remaining butter. Toss in the sliced mushrooms and cook until tender, about 5 minutes. Stir in minced garlic and cook for an additional minute.
  3. Pour in the heavy cream and let it simmer gently, scraping the bottom of the pan. Add fresh thyme and grated Parmesan cheese, stirring until the sauce thickens slightly.
  4. Meanwhile, cook pasta according to package directions. Drain and reserve a cup of pasta water.
  5. Slice the chicken and add it back to the skillet with the drained pasta. Toss until well coated, adding pasta water if necessary for desired consistency.
  6. Finish with fresh parsley and a sprinkle of extra Parmesan. Serve warm and enjoy!

Notes

To achieve ideal consistency, add pasta water as needed. For a lighter version, substitute heavy cream with cashew cream or coconut milk.
