A comforting and delicious pasta dish featuring tender chicken in a rich, creamy sauce infused with garlic, butter, and fresh herbs.
Ingredients
- Chicken (breast or thighs)
- Unsalted butter
- Heavy cream
- Garlic (minced)
- Mushrooms (cremini or button)
- Pasta (fettuccine or penne)
- Fresh thyme
- Fresh parsley
- Parmesan cheese (grated)
- Salt and pepper
Instructions
- Season your chicken with salt and pepper. In a large skillet over medium heat, melt 1 tablespoon of butter. Add the chicken and cook until golden brown and cooked through, about 6-7 minutes. Remove from the skillet and let rest.
- In the same skillet, add the remaining butter. Toss in the sliced mushrooms and cook until tender, about 5 minutes. Stir in minced garlic and cook for an additional minute.
- Pour in the heavy cream and let it simmer gently, scraping the bottom of the pan. Add fresh thyme and grated Parmesan cheese, stirring until the sauce thickens slightly.
- Meanwhile, cook pasta according to package directions. Drain and reserve a cup of pasta water.
- Slice the chicken and add it back to the skillet with the drained pasta. Toss until well coated, adding pasta water if necessary for desired consistency.
- Finish with fresh parsley and a sprinkle of extra Parmesan. Serve warm and enjoy!
Notes
To achieve ideal consistency, add pasta water as needed. For a lighter version, substitute heavy cream with cashew cream or coconut milk.
