Ingredients

- 1 cup cottage cheese
- 1/3 cup extra virgin olive oil
- 1 tablespoon anchovy paste (or substitute with miso paste)
- 2 cloves fresh garlic, minced
- Juice of 1 lemon
- 2 tablespoons grated parmesan cheese
- 1 teaspoon Worcestershire sauce
- Salt and pepper to taste
Instructions
- Gather your ingredients.
- Blend the cottage cheese, olive oil, and anchovy paste until smooth.
- Incorporate the minced garlic and lemon juice, whisking until combined.
- Add grated parmesan and Worcestershire sauce, seasoning with salt and pepper.
- Taste and adjust seasoning as desired.
- Chill the dressing in the refrigerator for at least 30 minutes before serving.
- Serve over salads, grilled meats, or roasted vegetables.
Notes
For a lighter version, Greek yogurt can replace cottage cheese. Can use capers as anchovy substitute.
