A delightful dish combining creamy coconut milk and zesty lime with tender chicken thighs, perfect for family dinners.


Ingredients

  • 4 boneless, skinless chicken thighs
  • 1 can of coconut milk
  • 2 cloves of garlic, minced
  • 1 onion, diced
  • Juice and zest of 1 lime
  • 1 tablespoon oil
  • Salt and pepper to taste
  • Fresh cilantro or basil for garnish
  • Vegetables such as bell peppers or snap peas

Instructions

  1. Heat oil in a large skillet over medium-high heat. Season chicken thighs with salt and pepper, then add to the skillet.
  2. Cook until browned, about 5–7 minutes on each side.
  3. Remove chicken and set aside. In the same skillet, add diced onion and minced garlic, sauté until fragrant and translucent, about 3–4 minutes.
  4. Pour in the coconut milk, stirring to combine, and bring to a simmer. Add lime juice and zest.
  5. Return chicken to skillet, nestling it into the sauce, and cover. Simmer for 15–20 minutes until chicken is tender.
  6. Sprinkle with fresh herbs before serving.
  7. Serve over rice or quinoa, or with crispy vegetables.

Notes

Adjust seasoning to your taste; fresh herbs add great flavor and color.
