- 4 boneless, skinless chicken thighs
- 1 can of coconut milk
- 2 cloves of garlic, minced
- 1 onion, diced
- Juice and zest of 1 lime
- 1 tablespoon oil
- Salt and pepper to taste
- Fresh cilantro or basil for garnish
- Vegetables such as bell peppers or snap peas
Instructions
- Heat oil in a large skillet over medium-high heat. Season chicken thighs with salt and pepper, then add to the skillet.
- Cook until browned, about 5–7 minutes on each side.
- Remove chicken and set aside. In the same skillet, add diced onion and minced garlic, sauté until fragrant and translucent, about 3–4 minutes.
- Pour in the coconut milk, stirring to combine, and bring to a simmer. Add lime juice and zest.
- Return chicken to skillet, nestling it into the sauce, and cover. Simmer for 15–20 minutes until chicken is tender.
- Sprinkle with fresh herbs before serving.
- Serve over rice or quinoa, or with crispy vegetables.

Adjust seasoning to your taste; fresh herbs add great flavor and color.
