Ingredients

  • 2 cups boneless chicken (breast or thighs), diced
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 green bell pepper, diced
  • 1 onion, diced
  • 8 oz cream cheese
  • 1 cup sour cream
  • 2 tbsp fajita seasoning
  • 1 cup cheddar cheese, shredded
  • 2 tbsp olive oil
  • Fresh cilantro, for garnish
  • Lime wedges, for serving

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet over medium heat, add olive oil, diced onions, and bell peppers. Cook until tender, about 5–7 minutes.
  3. Add the diced chicken to the skillet. Sprinkle in the fajita seasoning and sauté until the chicken is cooked through, roughly 10 minutes.
  4. Lower the heat and mix in cream cheese followed by sour cream, stirring until melted and creamy.
  5. In a greased baking dish, layer the chicken mixture. Top with shredded cheddar cheese.
  6. Bake in the oven for 20-25 minutes or until the cheese is golden and bubbly.
  7. Let it sit for a few minutes before serving, garnished with fresh cilantro and lime wedges.

Notes

For a spicier version, add jalapeños. This dish can also be made vegetarian by using beans instead of chicken.
