- 2 cups boneless chicken (breast or thighs), diced
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1 green bell pepper, diced
- 1 onion, diced
- 8 oz cream cheese
- 1 cup sour cream
- 2 tbsp fajita seasoning
- 1 cup cheddar cheese, shredded
- 2 tbsp olive oil
- Fresh cilantro, for garnish
- Lime wedges, for serving
Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet over medium heat, add olive oil, diced onions, and bell peppers. Cook until tender, about 5–7 minutes.
- Add the diced chicken to the skillet. Sprinkle in the fajita seasoning and sauté until the chicken is cooked through, roughly 10 minutes.
- Lower the heat and mix in cream cheese followed by sour cream, stirring until melted and creamy.
- In a greased baking dish, layer the chicken mixture. Top with shredded cheddar cheese.
- Bake in the oven for 20-25 minutes or until the cheese is golden and bubbly.
- Let it sit for a few minutes before serving, garnished with fresh cilantro and lime wedges.
Notes
For a spicier version, add jalapeños. This dish can also be made vegetarian by using beans instead of chicken.
