- 1 lb boneless chicken (breast or thighs)
- 6 strips thick-cut bacon
- 1 sweet onion, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 2 carrots, diced
- 2 stalks celery, diced
- 1 tsp fresh thyme
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot over medium heat, cook the chopped bacon until crispy. Remove and set aside, keeping drippings in the pot.
- Add diced onion to the pot and sauté until translucent, about 3 minutes. Add garlic and cook for another minute until fragrant.
- Stir in bite-sized pieces of chicken and sauté until no longer pink. Season with salt, pepper, and thyme.
- Deglaze the pot by adding a splash of chicken broth, scraping up brown bits from the bottom.
- Pour in the remaining chicken broth, carrots, and celery. Bring to a boil, then reduce heat and let simmer for about 20 minutes until vegetables are tender.
- Stir in the heavy cream and return the crispy bacon to the pot. Simmer for another 5 minutes.
- Taste and adjust seasoning, then garnish with fresh parsley before serving.
