Ingredients

  • 1 lb boneless chicken (breast or thighs)
  • 6 strips thick-cut bacon
  • 1 sweet onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 carrots, diced
  • 2 stalks celery, diced
  • 1 tsp fresh thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot over medium heat, cook the chopped bacon until crispy. Remove and set aside, keeping drippings in the pot.
  2. Add diced onion to the pot and sauté until translucent, about 3 minutes. Add garlic and cook for another minute until fragrant.
  3. Stir in bite-sized pieces of chicken and sauté until no longer pink. Season with salt, pepper, and thyme.
  4. Deglaze the pot by adding a splash of chicken broth, scraping up brown bits from the bottom.
  5. Pour in the remaining chicken broth, carrots, and celery. Bring to a boil, then reduce heat and let simmer for about 20 minutes until vegetables are tender.
  6. Stir in the heavy cream and return the crispy bacon to the pot. Simmer for another 5 minutes.
  7. Taste and adjust seasoning, then garnish with fresh parsley before serving.
