- Fresh thyme or parsley for seasoning
- 1 cup shredded cheese (for topping)
Instructions
- Preheat your oven to 375°F (190°C). Grease a 3-quart casserole dish and set aside.
- Heat a drizzle of olive oil in a large skillet over medium heat. Add diced onions and minced garlic, sautéing until fragrant and translucent.
- Add your chicken to the skillet, cooking until evenly browned on all sides. If using pre-cooked chicken, just warm it.
- Stir in sliced mushrooms, followed by asparagus once they release their moisture. Cook until they’re bright green and tender.
- Combine cream cheese and chicken broth in a mixing bowl, whisking until smooth. Season with salt, pepper, and herbs to taste.
- Pour the creamy mixture over the chicken and vegetables, stirring gently to combine.
- Transfer the mixture into your prepared casserole dish and sprinkle shredded cheese over the top.
- Cover with foil and bake for 20-25 minutes, then remove the foil and bake for an additional 10-15 minutes until bubbly and golden.
- Allow the casserole to rest for a few moments before serving.
