Instructions
- Preheat your oven to 325°F (160°C) and let the beef roast sit at room temperature for 30 minutes.
- Generously season the roast with salt and pepper, massaging the seasoning in well.

- Place the seared roast into a roasting pan and pour the cranberry mixture over it. Add sliced onions and herbs around the roast.
- Cover with foil and roast in the oven for about 20 minutes per pound for medium-rare.
