- 1 beef roast (ribeye or sirloin)
- 2 cups fresh cranberries
- 1 cup onions, chopped
- 4 cloves garlic, minced
- 1/2 cup brown sugar
- 1 cup low-sodium beef broth
- 2 tablespoons fresh rosemary, chopped
- 2 tablespoons fresh thyme, chopped
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 325°F (165°C).
- Pat the beef roast dry and season generously with salt and pepper.
- In a skillet, heat olive oil over medium-high heat, then sear the beef on all sides until golden brown (2-3 minutes per side).
- Add onions and garlic to the skillet and sauté until softened.
- In a bowl, combine cranberries, brown sugar, and a dash of beef broth.
- In a roasting pan, add the seared beef and pour the sautéed onions and garlic around it. Ladle the cranberry mixture on top and add the remaining beef broth.
- Cover with foil and roast in the oven for 2-3 hours, basting occasionally, until the desired internal temperature is reached.
- Let the roast rest for at least 15 minutes before slicing.
- Serve with the cranberry sauce drizzled over the top.
Notes
Experiment with cranberries based on taste preference. Consider adding red pepper flakes for a spicier kick.
