  • 1 beef roast (ribeye or sirloin)
  • 2 cups fresh cranberries
  • 1 cup onions, chopped
  • 4 cloves garlic, minced
  • 1/2 cup brown sugar
  • 1 cup low-sodium beef broth
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 325°F (165°C).
  2. Pat the beef roast dry and season generously with salt and pepper.
  3. In a skillet, heat olive oil over medium-high heat, then sear the beef on all sides until golden brown (2-3 minutes per side).
  4. Add onions and garlic to the skillet and sauté until softened.
  5. In a bowl, combine cranberries, brown sugar, and a dash of beef broth.
  6. In a roasting pan, add the seared beef and pour the sautéed onions and garlic around it. Ladle the cranberry mixture on top and add the remaining beef broth.
  7. Cover with foil and roast in the oven for 2-3 hours, basting occasionally, until the desired internal temperature is reached.
  8. Let the roast rest for at least 15 minutes before slicing.
  9. Serve with the cranberry sauce drizzled over the top.

Notes

Experiment with cranberries based on taste preference. Consider adding red pepper flakes for a spicier kick.
