- 12 Medjool dates
- 8 oz cream cheese, softened
- 1/2 cup dried cranberries, chopped
- 1/2 cup pecans, chopped
- 1 tbsp honey (optional)
- Pinch of salt
Instructions
- Prepare the Dates: Pit the dates by slicing them open on one side and remove the pit.
- Make the Filling: In a bowl, mix cream cheese, chopped cranberries, pecans, honey, and salt until well combined.
- Stuff the Dates: Generously fill each date with the cream cheese mixture.
- Chill: Place stuffed dates on a tray and chill in the refrigerator for about 30 minutes.
- Garnish (Optional): Sprinkle with extra pecans or drizzle honey before serving.
- Serve: Arrange on a platter and enjoy!
Notes
For lighter filling, substitute cream cheese with Neufchâtel cheese. You can also experiment with different nuts or dried fruits.
