Instructions
- Preheat your oven to 350°F (175°C) and grease your pan.
- If using fresh cranberries, rinse and dry them off, tossing with a tablespoon of flour.
- In a large bowl, combine olive oil, sugar, and orange juice; whisk until smooth, then mix in the orange zest.
- In a separate bowl, whisk flour, baking powder, baking soda, and salt.
- Gradually add the dry mixture to the wet ingredients without over-mixing.
- Fold in the cranberries and pour the mixture into the prepared pan.
- Bake for 30-35 minutes until a toothpick inserted comes out clean.
- Cool in the pan for 10 minutes before transferring to a wire rack and dust with powdered sugar if desired.
