- 1 cup sugar
- 2 cups whipped cream
- 8 oz cream cheese
- 1 pre-made graham cracker crust
- 2 tablespoons lemon juice
Instructions
- Prepare the cranberries: Rinse fresh cranberries and put them in a saucepan with sugar and lemon juice. Cook over medium heat until they burst and dissolve, approximately 8–10 minutes. Let it cool.
- Make the mousse: In a mixing bowl, beat cream cheese until smooth. Gradually fold in the whipped cream and cooled cranberry mixture until well combined. The mousse should be light and airy.
- Ready the crust: If making your crust, combine crushed graham crackers with melted butter and press it into a pie dish firmly. Bake it for about 10 minutes to set.
- Combine and chill: Pour the cranberry mousse filling into the prepared crust. Refrigerate for at least 240 minutes or overnight to let it firm up.
- Serve and enjoy: Top your pie with additional whipped cream or fresh cranberries for a festive touch before slicing.
