  • Fresh rosemary

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Rinse the chicken under cold water, pat it dry, and place it in a roasting dish.
  3. In a small bowl, whisk together the maple syrup, minced garlic, salt, pepper, and olive oil.
  4. Brush the marinade generously all over the chicken, including under the skin.
  5. Scatter the fresh cranberries and herbs around the chicken in the roasting dish.
  6. Roast the chicken for about 90 minutes, basting halfway through.
  7. Let the chicken rest for 10-15 minutes before carving.
