Description

Deliciously tart Cranberry Lemon Bars with a buttery crust that are perfect for family gatherings and special occasions.


Ingredients

  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1/2 cup cold unsalted butter
  • 2 large eggs
  • 1 cup granulated sugar
  • 2 tablespoons all-purpose flour
  • 1/4 cup lemon juice
  • Zest of 1 lemon
  • 1 1/2 cups fresh or frozen cranberries
  • Powdered sugar for dusting

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8×8-inch pan or line it with parchment paper.
  2. In a large mixing bowl, combine 1 cup of all-purpose flour, 1/4 cup of granulated sugar, and 1/2 cup of cold, unsalted butter. Blend until the mixture resembles coarse crumbs, then press it evenly into the bottom of the prepared pan. Bake for about 15 minutes or until lightly golden.
  3. In another bowl, whisk together 2 large eggs, 1 cup of granulated sugar, 2 tablespoons of all-purpose flour, 1/4 cup of lemon juice, and the zest of one lemon. Fold in 1 1/2 cups of cranberries.
  4. Pour the filling over the hot crust and return it to the oven. Bake for an additional 25 minutes or until the filling is set with a slight jiggle remaining in the center.
  5. Allow the bars to cool completely in the pan. Refrigerate for at least 2 hours before cutting into squares. Dust generously with powdered sugar before serving.

Notes

Use cold butter for a flaky crust. Don’t skip the refrigeration step for best texture.
