- 1/4 cup ice water
- 1 egg (for egg wash)
Instructions
- Prepare the Filling: In a saucepan, combine cranberries, sugar, cinnamon, and a splash of water over medium heat. Stir until cranberries burst and thicken, about 10 minutes. Set aside to cool.
- Make the Dough: In a mixing bowl, combine flour and salt. Cut in chilled butter until the mixture resembles coarse crumbs. Gradually add ice water until dough forms a disk. Wrap and chill for 30 minutes.
- Roll Out the Dough: On a floured surface, roll the dough to 1/8-inch thick. Cut into 4-inch circles.
- Fill the Hand Pies: Place a tablespoon of cooled filling in the center of each circle. Fold dough to create a half-moon shape and seal edges with a fork.
- Brush with Egg Wash: Place pies on a parchment-lined baking sheet and brush with beaten egg.
- Bake: Preheat oven to 375°F (190°C) and bake for 25-30 minutes until golden brown.
- Cool and Serve: Let cool slightly before serving. Enjoy warm or at room temperature.
