Instructions
- Preheat your oven to 375°F (190°C). Roll out your pie crust and fit it into a 9-inch pie pan.
- Blind bake the crust for about 10-15 minutes until lightly golden.
- Whisk together eggs, sugar, heavy cream, and vanilla in a mixing bowl until well combined.
- Fold in the cranberries, ensuring they’re evenly coated with the custard mixture.
- Pour the custard mixture into the pre-baked pie crust, leaving a little space at the top.
- Bake for 40-45 minutes until set but slightly jiggly in the center.
- Cool at room temperature for about an hour before transferring to the refrigerator.
- Serve chilled or at room temperature, garnished with whipped cream or powdered sugar.
