Delightful baked phyllo cups filled with creamy Brie and sweet-tart cranberries, perfect for any occasion.

- 1 package phyllo dough
- 1 cup Brie cheese, cut into small slices
- 1 cup fresh or frozen cranberries
- 1 tablespoon fresh rosemary or thyme, chopped
- 2 tablespoons honey or maple syrup
- 1 egg, beaten (for egg wash)
- 4 tablespoons melted butter
Instructions
- Preheat your oven to 375°F (190°C).
- Prepare your phyllo sheets by unrolling them and keeping a damp towel over the unused sheets.
- Brush a muffin tin with melted butter and layer two sheets of phyllo dough, brushing each with butter as you stack them. Cut them into squares and press into the muffin tin.
- In a mixing bowl, combine cranberries, chopped herbs, and honey. Adjust sweetness as preferred.
- Place a dollop of the cranberry mixture in each phyllo cup, followed by a slice of Brie on top.
- Bake for 12–15 minutes until golden brown and cheese is melted.
- Let cool slightly before serving. Best enjoyed warm!
Notes
Avoid overfilling the cups to prevent tearing. Keep phyllo dough covered while working to prevent drying out.
