  • 1 cup long-grain white rice
  • 6 cups chicken broth
  • 1/2 cup sour cream or cream cheese
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 carrots, finely diced
  • 2 stalks celery, finely diced
  • 1 cup peas
  • Fresh parsley, for garnish
  • Salt and pepper, to taste
  • 1 tablespoon olive oil
  • Optional: Thyme, for flavor

Instructions

  1. In a large pot, heat olive oil over medium heat and sauté onions and garlic until translucent.
  2. Season chicken with salt and pepper, add to the pot, and brown on all sides.
  3. Add diced carrots, celery, and any other preferred vegetables. Sauté until slightly softened.
