- 6 cups chicken broth

- 2 carrots, finely diced
- 2 stalks celery, finely diced
- 1 cup peas
- Fresh parsley, for garnish
- Salt and pepper, to taste

Instructions
- In a large pot, heat olive oil over medium heat and sauté onions and garlic until translucent.
- Season chicken with salt and pepper, add to the pot, and brown on all sides.
- Add diced carrots, celery, and any other preferred vegetables. Sauté until slightly softened.
- Stir in rice, then pour in chicken broth. Bring to a gentle boil.
- Reduce heat and simmer for 20-25 minutes, until chicken is cooked through and rice is tender.
