Ingredients

  • 1 lb boneless, skinless chicken breast or thighs
  • 8 oz cream cheese
  • 8 cups chicken broth
  • 8 oz egg noodles
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 stalks celery, chopped
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • Fresh parsley or green onions for garnish

Instructions

  1. In a large pot, melt butter over medium heat and add chopped onions, garlic, and celery. Sauté until fragrant and tender, about 3-4 minutes.
  2. Add the chicken and sear until lightly browned on all sides, about 5-7 minutes.
  3. Pour in chicken broth and bring to a gentle boil. Add egg noodles and allow them to cook until tender, about 10 minutes.
  4. Lower the heat and add cubed cream cheese, stirring until melted and smooth.
  5. Stir in thyme and season with salt and pepper to taste.
  6. Garnish with chopped green onions, if desired, and serve hot in bowls.

Notes

Use a wooden spoon to scrape the bottom while stirring, and avoid overcooking the noodles.
