Ingredients

- 1 lb boneless, skinless chicken breast or thighs
- 8 oz cream cheese
- 8 cups chicken broth
- 8 oz egg noodles
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 2 stalks celery, chopped
- 1 tsp dried thyme
- Salt and pepper to taste
- Fresh parsley or green onions for garnish
Instructions
- In a large pot, melt butter over medium heat and add chopped onions, garlic, and celery. Sauté until fragrant and tender, about 3-4 minutes.
- Add the chicken and sear until lightly browned on all sides, about 5-7 minutes.
- Pour in chicken broth and bring to a gentle boil. Add egg noodles and allow them to cook until tender, about 10 minutes.
- Lower the heat and add cubed cream cheese, stirring until melted and smooth.
- Stir in thyme and season with salt and pepper to taste.
- Garnish with chopped green onions, if desired, and serve hot in bowls.
Notes
Use a wooden spoon to scrape the bottom while stirring, and avoid overcooking the noodles.
