Ingredients

Scale
  • 4 bell peppers (red, yellow, or green)
  • 1 cup lump crab meat
  • 1 cup shrimp, peeled and deveined
  • 8 oz cream cheese, softened
  • 2 tbsp fresh parsley, chopped

  • Salt and pepper to taste
  • Optional: cheese for topping

  2. Slice the tops off the bell peppers and remove the seeds. Lightly brush the outsides with olive oil.
  3. Sauté shrimp in a skillet with olive oil for 3-4 minutes until pink, then let cool.
  4. In a large bowl, combine shrimp, crab meat, cream cheese, herbs, and spices. Stir until well mixed.
  5. Spoon the filling into each bell pepper, topping with cheese if desired.
  6. Place the peppers in a baking dish, cover with foil, and bake for 25 minutes. Remove the foil and bake for another 10-15 minutes until tender.

Notes

For added texture, consider adding breadcrumbs to the filling. Use fresh herbs for best flavor.
