  • 1 cup fresh crab meat
  • 1 cup mixed vegetables (scallions, peas, carrots)
  • 2 tablespoons soy sauce (low-sodium for a healthier option)
  • 2 cloves garlic, minced
  • 1/2 onion, diced
  • 2 eggs
  • 1 tablespoon butter
  • 1 tablespoon cooking oil
  • Salt and pepper to taste
  • Squeeze of lime juice

Instructions

  1. Prep your ingredients: Have everything chopped and ready to go.
  2. Sauté aromatics: In a large skillet or wok, heat oil and butter over medium heat. Add garlic and onions, cooking until fragrant, about 2-3 minutes.
  3. Add vegetables: Toss in your vegetables, stirring for another 2-3 minutes until softened.
  4. Push to the side: Slide the veggies to the edge of the pan, creating space. Add more butter and scramble the eggs.
  5. Mix in the crab: Gently fold in the fresh crab meat.
  6. Stir in rice: Add day-old rice, breaking up clumps. Pour in soy sauce, season with salt, pepper, and lime juice.
  7. Heat through: Stir and cook for another 5-7 minutes until warmed and flavors meld.
  8. Finishing touches: Garnish with scallions and serve hot.

Notes
