- 1 cup fresh crab meat
- 1 cup mixed vegetables (scallions, peas, carrots)
- 2 tablespoons soy sauce (low-sodium for a healthier option)
- 2 cloves garlic, minced
- 1/2 onion, diced
- 2 eggs
- 1 tablespoon butter
- 1 tablespoon cooking oil
- Salt and pepper to taste
- Squeeze of lime juice
Instructions
- Prep your ingredients: Have everything chopped and ready to go.
- Sauté aromatics: In a large skillet or wok, heat oil and butter over medium heat. Add garlic and onions, cooking until fragrant, about 2-3 minutes.
- Add vegetables: Toss in your vegetables, stirring for another 2-3 minutes until softened.
- Push to the side: Slide the veggies to the edge of the pan, creating space. Add more butter and scramble the eggs.
- Mix in the crab: Gently fold in the fresh crab meat.
- Stir in rice: Add day-old rice, breaking up clumps. Pour in soy sauce, season with salt, pepper, and lime juice.
- Heat through: Stir and cook for another 5-7 minutes until warmed and flavors meld.
- Finishing touches: Garnish with scallions and serve hot.

Use day-old rice for the best texture. Experiment with veggies and proteins as per your preference.
