Ingredients

- 1 lb fresh lump crab meat
- 1 cup panko breadcrumbs
- 2 cloves fresh garlic, minced
- 1 small onion, finely chopped
- 2 tablespoons fresh parsley, chopped (or dill)
- 2 large eggs
- 1 tablespoon lemon juice
- Salt and pepper to taste
- 1/4 teaspoon cayenne or Old Bay seasoning
- Oil for frying
Instructions
- In a large bowl, combine fresh crab meat, panko breadcrumbs, garlic, onion, and herbs. Mix gently to retain some lumps of crab.
- In a separate bowl, whisk together the eggs, seasonings, and lemon juice. Pour this mixture over the crab mixture and fold in gradually until just combined.
- Preheat your skillet with an inch of oil over medium heat.
- Using a tablespoon, scoop out portions of the mixture and carefully place them in the hot oil. Fry until golden brown, about 3-4 minutes per side.
- Once browned, transfer to a paper towel-lined plate to drain excess oil.
Notes
For the crispiest results, avoid overcrowding the skillet, and adjust the heat to maintain oil temperature.
