  • 2 tbsp butter

Instructions

  1. Sauté the aromatics: Heat a large pot over medium heat. Add butter, onion, celery, and garlic, stirring until the onions are translucent and fragrant, about 5-7 minutes.
  2. Add the broth and potatoes: Pour in the vegetable or seafood broth, then add diced potatoes (if using). Allow this mixture to simmer for about 10-15 minutes, or until the potatoes are tender.
  3. Incorporate the corn and crab: Stir in the sweet corn and crab meat, followed by heavy cream. Let the chowder simmer gently for another 5-10 minutes.
  4. Season to taste: Finally, season the chowder with salt, pepper, and fresh herbs. Give it a good stir and let all those amazing flavors meld together.
  5. Serve: Ladle the chowder into bowls and sprinkle with additional herbs for garnish if desired. It pairs perfectly with crusty bread or crackers for dipping.
