Ingredients

  • 4 boneless chicken breasts or thighs
  • 4 cloves garlic, minced
  • 3 tablespoons unsalted butter
  • 8 oz cremini or button mushrooms, sliced
  • 2 teaspoons fresh thyme or rosemary
  • 1 cup chicken broth
  • 1/2 cup heavy cream (optional)
  • Salt and pepper to taste

Instructions

  1. Melt 1 tablespoon of butter in a skillet over medium heat. Add mushrooms and a pinch of salt; cook until golden brown, about 6-7 minutes. Remove from pan.
  2. Add another tablespoon of butter to the skillet. Season chicken with salt and pepper; cook until golden brown and cooked through, approximately 6-8 minutes per side.
  3. Add minced garlic to the skillet and sauté for 1 minute until fragrant.
  4. Return mushrooms to skillet, add chicken broth, and simmer for a few minutes. Stir in heavy cream, if using, and allow to thicken.
  5. Stir in fresh herbs just before serving.

Notes

For a vegetarian version, substitute chicken with tofu or seitan and butter with plant-based alternatives. Serve with rice, mashed potatoes, or crusty bread.
