Instructions
- Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.
- In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Gradually add the mint extract and mix until combined.
- Sift in the all-purpose flour and mix until no flour streaks remain.
- Fold in the mint chocolate chips and nuts if using.
- Using a cookie scoop or two spoons, drop dough onto the prepared baking sheets, about 2 inches apart.
