Ingredients

  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 teaspoons ground cinnamon
  • 1 cup Greek yogurt
  • 2 large eggs
  • 1/2 cup melted butter
  • 1 teaspoon vanilla extract
  • 1/2 cup brown sugar (for cinnamon swirl)

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare a greased loaf pan.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, salt, sugar, and cinnamon.
  3. In another bowl, whisk together the yogurt, melted butter, eggs, and vanilla until smooth.
  4. Fold the wet ingredients into the dry ingredients until just combined.
  5. Mix brown sugar and cinnamon in a small bowl for the swirl.
  6. Pour half the batter into the loaf pan, sprinkle half the cinnamon-sugar mixture, and layer with the rest of the batter and cinnamon sugar. Swirl gently with a skewer.
  7. Bake for 50-60 minutes until a toothpick inserted comes out clean. Cover with foil if browning too quickly.
  8. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

For a healthier option, use whole wheat flour or substitute half of the yogurt with unsweetened applesauce.
