- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 2 teaspoons ground cinnamon
- 1 cup Greek yogurt
- 2 large eggs
- 1/2 cup melted butter
- 1 teaspoon vanilla extract
- 1/2 cup brown sugar (for cinnamon swirl)
Instructions
- Preheat the oven to 350°F (175°C) and prepare a greased loaf pan.
- In a large bowl, whisk together the flour, baking powder, baking soda, salt, sugar, and cinnamon.
- In another bowl, whisk together the yogurt, melted butter, eggs, and vanilla until smooth.
- Fold the wet ingredients into the dry ingredients until just combined.
- Mix brown sugar and cinnamon in a small bowl for the swirl.
- Pour half the batter into the loaf pan, sprinkle half the cinnamon-sugar mixture, and layer with the rest of the batter and cinnamon sugar. Swirl gently with a skewer.
- Bake for 50-60 minutes until a toothpick inserted comes out clean. Cover with foil if browning too quickly.
- Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
Notes
For a healthier option, use whole wheat flour or substitute half of the yogurt with unsweetened applesauce.
