- 8 oz cream cheese (or ricotta/Greek yogurt)
- 3/4 cup sugar (or brown sugar/maple syrup)
- 3 large eggs (or flax eggs/silken tofu for vegan)
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/4 tsp ground clove
- 1 pie crust (homemade or store-bought)
- 1 tsp vanilla extract
Instructions
- Preheat your oven to 350°F (175°C).
- Prepare the pie crust by rolling it out and placing it in the pie pan, poking holes to prevent bubbles.
- In a mixing bowl, beat the cream cheese until smooth and gradually add the sugar.
- Stir in the pumpkin puree, followed by the eggs and spices until well combined.
- Pour the mixture into the prepared pie crust and spread evenly.
- Bake for 45–50 minutes until the filling is set and the crust is golden brown.
- Cool for at least an hour before slicing to allow flavors to meld.
Notes
For a lighter option, substitute cream cheese with Greek yogurt. Room temperature ingredients mix better for a smoother filling.
