Ingredients

  • Boneless chicken (breast or thighs)
  • Buttermilk
  • All-purpose flour
  • Panko breadcrumbs
  • Salt
  • Pepper
  • Garlic powder
  • Paprika
  • Fresh parsley, chopped
  • Chives, chopped
  • Unsalted butter
  • Fresh minced garlic
  • Lemon juice
  • Your favorite buns or bread

Instructions

  1. Marinate the chicken in buttermilk for at least 30 minutes or preferably overnight.
  2. Prepare a dredging station with seasoned flour, beaten eggs, and a panko mixture.
  3. Dredge each piece of chicken in flour, then dip into the egg wash, and finally coat with panko.
  4. Fry in medium oil until golden brown or bake on a lined sheet at 400°F (200°C) for about 20 minutes.
  5. Make the cowboy butter by melting butter and mixing in garlic, herbs, lemon juice, salt, and pepper.
