Ingredients
- Boneless chicken (breast or thighs)
- Buttermilk
- All-purpose flour
- Panko breadcrumbs
- Salt
- Pepper
- Garlic powder
- Paprika
- Fresh parsley, chopped
- Chives, chopped
- Unsalted butter
- Fresh minced garlic
- Lemon juice
- Your favorite buns or bread
Instructions
- Marinate the chicken in buttermilk for at least 30 minutes or preferably overnight.
- Prepare a dredging station with seasoned flour, beaten eggs, and a panko mixture.
- Dredge each piece of chicken in flour, then dip into the egg wash, and finally coat with panko.
- Fry in medium oil until golden brown or bake on a lined sheet at 400°F (200°C) for about 20 minutes.
- Make the cowboy butter by melting butter and mixing in garlic, herbs, lemon juice, salt, and pepper.
- Assemble the sandwich with crispy chicken, cowboy butter, and your choice of toppings.
- Cut in half for presentation and enjoy!
